first of all let me wish you a happy new year. as you can read, i was cleaning out the fridge and trying to make healthier choices and cook better food. if you know me well, you know that i love trying out new recipes and giving them my personal touch. i often check what i have and then make slight or big changes, depending on my mood.
as it seems, i have choosen yellow foods yesterday. what the heck, i also donned a yellow shirt and this morning took out a orange (is that a fortified yellow) color combination for my work attire.
for this dish, i used a butterflied skinned chicken and seasoned it with a spice rub made of ras el hanout, chicken seasoning, smoked paprika and then i added garlic, onion and fresh vegetables like bell peppers, and slices of orange peel. at the final stage i added a cup of cleaned brusselsprouts and carrots, celery stalk and some lemon juice.

i served the dish with some seasoned couscous, and because i also discovered a huge sweet potato in the fridge, it became part of the menu as a puree.
as you can see, there are (yellow) bananas and a yellow fruit juice on the side. i totally enjoyed this meal, it was lowfat and filling.
